You can create a custom page and add a Gallery block.

To update your Gallery block, you can upload new images or deselect ones you don't want to show using the Image Library. This appears after double-clicking on the Gallery block in BlockLab.

You can rearrange the Gallery block using the Image Reordering area of Shopblocks. You can use this by selecting 'Custom Order'.
